Paul's Favorite Malted Granola


I picked this recipe up many years ago when I was working as a chef in a hotel and in my mind its a perfect pairing for any of our Greek style yoghurts.



It's so simple and quick to do its a simply a must try!



For this you will need 1 large mixing bowl, 1 mixing spoon, 1 small saucepan, a whisk, a large baking tray and greaseproof paper to cover the tray.



Ingredients

6 Cups

Rolled Oats

1 Cup

Bigger Jugs Flaked Barley

1 Cup

Coconut Flakes

½ Cup

Crushed Walnuts

½ Cup

Dried Cranberries

1 Tablespoon

Bigger Jugs Medium Malt Powder

½ Cup

Water

¾ Cup

Brown Sugar

2 Tablespoons

Coconut Oil (Or Butter)

100g

Chopped Dark chocolate

2 Tablespoons

Cocoa Powder (Optional)

Big Pinch

Corse Sea Salt



Method



  1. Preheat your oven to 160 degrees Celsius.

  2. In your bowl stir together the oats, barley, coconut flakes, nuts, berries and cocoa powder (if using).

  3. Combine the water and brown sugar in a small saucepan over moderate heat. Stir until the sugar dissolves. Bring to a boil and cook for 1 minute.

  4. Remove from the heat and whisk in the coconut oil, dark chocolate, and sea salt until the chocolate is melted.

  5. Pour the hot syrup over the oat mixture and mix until well combined with the spoon being careful it will be HOT!!!

  6. Spread the mixture across your large tray and bake for 30-40 minutes

  7. when its done try to resist temptation and let cool completely.



Store in a air tight container and enjoy!
