Irish Moss is also known as Carragreen Moss (latin name Chondrus Crispus). It is used to prevent protein haze in beer making as it improves the precipitation of proteins during the boiling of the wort. Simply add 5gms (one teaspoon) to the boiling wort during for the last 15 minutes to help clear your beer.
