This M20 Bavarian Wheat Beer yeast is a top fermenting yeast which imparts banana and clove esters balanced with spiced aromas to the beer. It produces a beer with a silky mouthfeel and a rich body and is suitable for making Hefeweizen, Kristal Weizen, Dunkel Weizen and similar wheat beers.

Flavour / Mouthfeel Characteristics: While this yeast has only a moderate tendency to attenuate, the final beer will not be sweet. Instead it will have a creamy head and a silky mouthfeel with a full and rich medium body. This strain strips away most caramel and complex malt flavours allowing deep roast and chocolate flavours to come through. The slight acidity produced greatly enhances wheat malt characteristics. Also this strain has a very low flocculation rate that makes it ideal for making beers that are traditionally served cloudy.

Aroma Characteristics: This yeast has abundant classic banana esters, balanced with clove like phenolic aromas which tend to overwhelm any malt or hop character in the beer.

Higher Alcohol Beers: In higher alcohol beers the phenolic character presented by this strain becomes a bit smokey and esters burst forth. Also this yeast's low attenuation rate may result in a sweet beer at higher alcohol levels.
