Campden Tablets (50s) are used for preserving and sterilising. Follow the instructions in your recipe or just add 1 crushed tablet for each gallon of wine at the end of fermentation to prevent oxidation and bacterial contamination during bottling and syphoning. A sterilizing solution is made by crushing 5 tablets in 1 pint of hot water.
